eFitClub in the Community
Join us on Thursday, Oct 24th for our first Open House & Charity Fundraiser benefiting the Boys and Girls Club of the Lowcountry.

There will be door prizes, food from our local partners, and a bucket raffle to support the Boys and Girls Club. Special guest WJCL weatherman Jim McFadden will be here from 6-7pm.

This will be the last day for new member discounts so tell a friend.

Face Yoga Anyone?
An outside trainer has offered to hold face yoga classes onsite. If there is enough interest we'll add it to the schedule. If you're interested, please let one of the staff know.  Note there would be a small charge payable to the trainer.

Baked Salmon with Tomatoes, Spinach & Mushrooms

Nutrition Bonus: The spinach and salmon in this flavourful dish team up to provide a good source of vitamin A per serving.
Ingredients:
4 skin-on salmon fillets (1 lb./450 g)
2 cups chopped fresh spinach
1 cup sliced fresh mushrooms
1 tomato, chopped
1/4 cup Kra Extra Virgin Olive Oil
Italian Sun-Dried Tomato Dressing

 
  • Heat oven to 375°F.
  • Place fish, skin sides down, in 13x9-inch baking dish sprayed with cooking spray.
  • Combine remaining ingredients; spoon over fish.
  • Bake 20 to 25 min. or until fish flakes easily with fork.
Substitute: Prepare using red snapper or orange roughy fillets.
Serving Suggestion: Serve with hot cooked brown rice to round out the meal.
